1) 24 oz bag raw broccoli
2) 1 cup light mayo
3) 1 cup raw nuts/seeds/dried fuit trail mix (I love “Second Nature – Simplicity Medley” from Kroger)*
*Before you add this to salad it needs to be roasted at around 350 degrees until golden brown (around 5-8 mins). Spray with cooking spray and add sea salt before roasting. Once done, stir well and let cool.
4) 5-6 slices of cooked turkey bacon (can bake in oven for easy clean-up) – break in small pieces
5) 1/2 medium sweet onion
6) 2T apple cider vinegar
7) 2T raw honey
8) Sea salt
9) Freshly ground pepper
Wash broccoli and break in bite-size pieces and dry. Chop onions and add to broccoli in large bowl. In a separate bowl, add mayo, vinegar, honey, salt and pepper — mix well (will become soupy).
Add dressing mixture to broccoli and onions along with bacon and trail mix. Stir well and refrigerate – will last for a few days!
