Ingredients
2 lbs heirloom tomatoes
2-3 garlic cloves
1/2 large purple onion, sliced into thin rings
Handful of basil leaves, shredded
Optional: 2-3T freshly shaved parmesan cheese (can use feta or blue for a different flavor)
3T extra virgin olive oil
2T apple cider vinegar ( can also use white balsamic vinegar)
Sea salt
Freshly ground pepper
Preparation
Cut tomatoes into chunks and put in serving bowl. Add garlic, onion & shredded basil. In a small glass jar with lid, place the olive oil, vinegar, salt & pepper. Shake vigorously. Pour over tomatoes and toss gently. If using, sprinkle cheese on top.
