Shrimp & Spinach Pasta


2 pounds shrimp, peeled and devained
1/2 cup butter
1 can of healthy request cream of mushroom soup
1 cup of light sour cream
1 cup light mayo
1 tablespoon chopped chives
4 tablespoons dry sherry
1/2 cup of parmesan cheese, 1/2 cup sharp Cheddar grated
1/2 teaspoon of Dijon style mustard

Cook noodles as directed on package. Line a 2 quart flat casserole dish with cooked noodles.  In a large frying pan, saute the shrimp in the butter until pink and tender (about 5 minutes) Cover the noodles with the shrimp and chives. Combine soup, sour cream, mustard in a bowl.  Mix well and pour over the shrimp and noodles evenly. Sprinkle the cheese over all.  Bake at 350 for 30 minutes until cheese has melted and bubbly.  Serves 8.  Add a colorful leafy green salad to make this meal complete!
