This recipe comes from our very own Vicki Wachowiak – a client who works hard at the gym and is always being creative in the kitchen!

1 head cauliflower
1/4 cup shredded parmesan cheese
1 Tablespoon almond meal
1 egg or 2 egg whites
Salt and pepper to taste
Optional: garlic powder, pizza seasoning or dried basil

Place the cauliflower in a food processor and pulse until it is very fine.  Put the riced cauliflower in a microwave safe bowl and microwave for 10 minutes until it is soft.  Take cheesecloth and squeeze out as much excess water as you can (you will need to let it cool a bit).  Add all ingredients and mix together.  Place parchment paper on a pizza pan.  Take the cauliflower and spread it onto the pan, it should work pretty easy.  Bake the crust for about 15 minutes on 425.  You want the crust to be browned.  Then top with your choice and continue to bake till the toppings are finished. Suggested pizza sauce we love is Golden Boy Pizza Sauce from Williams Sonoma.
