Living in the Peach State, I love to incorporate peaches into my summer meals. I made Georgia Peach Salsa and Grilled Chicken last night, and it got rave reviews, especially from the kids! This awesome peachy dish is made with fruit, veggies and herbs that are in peak season – so, the nutritional value is high and the flavors are amazing!
It only takes a few minutes to prepare – chop and mix the marinade and salsa, and let sit for a few hours. When you’re ready to eat, just put the chicken on the grill and top with the pre-made salsa. Voilà – a fresh, seasonal, healthy dinner the entire family will enjoy!
Ingredients
GRILLED CHICKEN
- 2 tablespoons lime juice
- 2 tablespoons honey
- 1 tablespoon soy sauce
- 1 tablespoon fresh cilantro
- 1 pound boneless skinless chicken breasts
PEACH SALSA
- 2 cups chopped Georgia peaches (the peaches should be firm)
- 3/4 cup chopped red bell pepper
- 1/4 cup seeded, chopped cucumber
- 1/4 cup sliced green onion
- 2 tablespoons seeded, finely minced jalapeno pepper
- 2 tablespoons honey
- 2 tablespoons lime juice
- 1 tablespoon fresh finely chopped cilantro
Preparation
- Make the chicken marinade: Combine lime juice, honey, soy sauce and cilantro and mix well.
- Place chicken and marinade in a food storage bag and marinate several hours or overnight in refrigerator.
- Make the salsa: Combine all salsa ingredients in large bowl. Mix, cover and chill in refrigerator for several hours.
- Grill chicken until internal temperature reaches 165º, about 5 minutes per side.
