½ cup crumpled light blue cheese
6T light sour cream
¼ cup light mayo
1T cider vinegar
¼ tsp celery salt
2 cucumbers, peeled, halved lengthwise, seeded & sliced thin
9 celery ribs, sliced thin, leaves reserved
Salt and pepper
½ cup hot sauce
2T unsalted butter, melted
4 boneless, skinless chicken breasts(about 1 ½ lbs.)
1. Combine blue cheese, sour cream, mayo, vinegar, and celery salt in bowl. Toss cucumbers, celery, and celery leaves with half of dressing in second bowl and stir to combine. Season with salt and pepper to taste.
2. Whisk hot sauce and butter together in third bowl. Toss chicken with ½ hot sauce mixture in fourth bowl.
3. Grill chicken over hot fire until it registers 160 degrees, about 5 minutes per side. Transfer to platter and brush with reserved hot sauce mixture. Serve with salad and remainder of dressing.
