Who doesn’t love chicken salad?! This Greek version is a flavorful twist on your traditional chicken salad. With the added Mediterranean staples of cucumber, oregano, red onion, lemon and kalamata olives, plus using Creamy Greek yogurt in place of mayo, this chicken salad will have you saying “Opa!”

 

Ingredients

  • 3 cooked chicken breasts (about 1 lb), chopped
  • 1 large peeled cucumber, chopped
  • 1 large red pepper, chopped
  • 2-3 celery stalks, chopped
  • ¼ cup red onion, chopped or thinly sliced
  • 2 tablespoons freshly squeezed lemon juice
  • 3 cloves garlic, minced
  • 2 tsp oregano
  • 1/4 cup Kalamata olives, chopped
  • Salt and pepper to taste
  • 1 cup plain fat free Greek yogurt
  • Feta cheese (optional) sprinked on top

Preparation

Mix all ingredients together in a big bowl. Serve on a sandwich, in a wrap or on its own – it’s really yummy to just eat it with cucumbers and celery!
